COOKBOOK | Kimchi Jjigae

Sudden crave for Kimchi Jjigae this few days. Craving for it soso badly, and thus i decided to make it myself! Cooking mode, ON. Searched high and low for all the necessary ingredients and made THIS :D Imma so proud of myself haha. First attempt on this Kimchi Jjigae (Kimchi Stew) and it turns out so good! So simple that anybody can do it trust me. Do give it a try :) It taste as good as it looks!

Glimpse of the ingredients for the delicious kimchi stew... Basically all the ingredients are pretty easy to find as they are commonly available in the market, except for the kimchi and gochujang. I kinda search everywhere for it zzzz -_-

200g Kimchi, RM8.30 /pack. I got this from Redtick Supermarket, Puchong. Quite convenient as the kimchi are readily cut and ready to serve.

Sunchang Gochujang (Hot Pepper Paste). Search high and low for this paste and i finally found it! Not sure where else you can get this, but I got mine for RM17.10 also from Redtick Supermarket, Puchong. One box like this can actually last you quite a while.

Sharing the recipe with you guys incase any of you might be interested :)

Ingredients [based on individual preference] :
350g Pork belly, cut & sliced, then marinated
1 packet of Kimchi 
1 packet of Soft Tofu
2 packet of Enoki Mushrooms 
3-4 cloves of Garlic, finely chopped
3-4 slices of Ginger, finely chopped
1 Big Onion, sliced
1 big tsp of Korean Gochujang [(add to taste)
2 tsp of Soy Sauce (add to taste
1 tsp of Rice Wine (add to taste)
Few stalks of Green Onions, chopped

Step by Step :
1) Heat oil in pot. Saute garlic, ginger and onion until fragrant. Add in pork belly, stir fry for 2-3minutes.
2) Add in kimchi and enoki mushrooms, saute for another 2-3 minutes.
3) Add water, rice wine, soy sauce and gochujang. Stir gently until it dissolve. 
4) Leave it to simmer for 20-30minutes.
5) Add in tofu and simmer for another 5minutes.
6) Garnish with green onions and serve. 

**Best served hot and with a bowl of rice yummm!

Everybody loves it. The best comfort food for rainy days. Exactly the same one as you normally eat in the restaurant, or maybe better ahemm (~˘▾˘)~  hahahh :P What a fruitful day! ^‿^
